You can wear what you like while waterskiing, as long as it doesn't hamper your movement or catch in the handle. Most people wear a bathing suit or shorts, but if the temperature or water is cold some skiers like to wear a wet suit to protect themselves against the elements. You can also get hoods for wetsuits to keep your head warm and of course, gloves are also available. Don't forget your life jacket and don't be afraid to wear protective head gear while water skiing, if you feel safer wearing one as it's never a bad idea to protect your head.
